Bresi is made from beef shank. The pieces are dry-salted and may be rubbed with herbs such as thyme and bay leaves. They are then smoked with softwood sawdust for a week and dried in our smokehouse for a month. This production method gives the bresi meat its dark red color, firm texture, and robust flavors.
