The center cut of the ham is meticulously trimmed by our butchers. This cut is salted, tied with string, and smoked over softwood in our smokehouse. It is cooked in the pouch with its own juices to pasteurize it.
To serve cold: Remove the meat from the pouch, remove the gelatin and the string. Slice the meat and enjoy.
To serve hot: Place the sealed pouch in hot water and simmer for about 1 hour.
