Description

Montbéliard sausage is a specialty of the Franche-Comté region. It is made from pork from pigs fed exclusively on whey, then smoked over softwood from the Haut-Doubs, which gives it its distinctive flavor.
Montbéliard sausage is easily distinguished from Morteau sausage because it is thinner, smaller (about 15 cm), leaner, and curved at both ends.
Seasoned with spices (notably caraway, or field cumin) and stuffed into a natural pork casing, it will delight you with its tender texture and savory taste. It is often used in traditional dishes, simply grilled, boiled, or incorporated into stews for a delicious and comforting meal.
Its tender and juicy texture, combined with its unique flavor, make it a favorite among charcuterie lovers.
Montbéliard sausage has been protected by a Protected Geographical Indication (PGI) since 2013, which guarantees that it is produced using traditional methods and within a specific geographical area.
