Selected by our butchers and cut from the upper part of the neck, the loin is a cut prized for its flavor and tenderness. It can be roasted or cut into flavorful ribs.

Smoked pork loin is prized for its tenderness and delicate pine-smoked flavor. After being dry-cured with salt for several hours, it is hung and slowly smoked over softwood sawdust in our smokehouse.
