This charcuterie product is prized for its tender texture and delicate smoky flavor, making it an ideal choice for a variety of dishes. Made from pork tenderloin, a lean and tender cut of pork, this product undergoes a meticulous preparation process that gives it its unique flavor.
It is dry-cured with salt, then hung and slowly smoked with softwood sawdust from the Haut-Doubs region in our smokehouse. It is then dried for several weeks.
Enjoy it as an appetizer, sliced thinly, or on a charcuterie platter to accompany your raclette or warm Mont d'Or.
