Smoked Raclette INTENSITY: Delicate and Smoky PRODUCTION: Raw cow’s milk from the pastures of Franche-Comté. It is traditionally made in a dairy, a guarantee of authenticity, quality, and flavor.   AGING: Aged for a minimum of 60 days in cellars in Pontarlier at an altitude of over 800 meters. Pre-aging takes place in a warm cellar, followed by aging in a cold cellar on spruce planks before being smoked with softwood, without any colorants or additives.
