Morteau Sausage Waffle

Ingredients

Preparation

Step 1: Place the Morteau sausage in cold water. Cook for 40 minutes starting from the moment the water begins to simmer.

Step 2: Boil the potatoes in another pot.

Step 3: While the waffles are cooking, prepare the batter.

Step 4: In a mixing bowl, combine the flour, baking powder, salt, and pepper.

Step 5: Separate the egg whites from the yolks and add the yolks to the mixture.

Step 6: Whisk while gently stirring in the milk.

Step 7: Add the olive oil and Comté cheese, then beat again.

Step 8: Beat the egg whites until stiff peaks form, then gently fold them into the mixture using a wooden spoon.

Step 9: Pour the batter into a waffle iron or waffle pan and cook.

Step 10: Slice the Morteau sausage and the potatoes into thin rounds.

Step 11: Remove the waffles from the mold and place them on a baking sheet.

Step 12: On a waffle, layer alternating slices of sausage and potato, then top with cancoillotte.

Step 13: Season with salt and pepper.

Step 14: Bake for 10 minutes.

Serve on a bed of green salad.
