This bison sausage is made from carefully selected French pork and bison meat sourced from a well-known breeder in Franche-Comté, located in Dampierre-Sur-Salon (70). The breeder imports and markets bison meat and related products in partnership with Canadian and North American breeders.
Once received, the meats are ground and seasoned by us. The mixture is then stuffed into natural beef casings. This marks the beginning of the sausage’s drying process.
